On the Environment
We take our responsibilities to the environment seriously. With the help of our NYU Environmental Studies intern we recently passed our Green Restaurant Association certification and will continue to reduce our carbon footprint.
A sampling of what we accomplished in the past 24 months includes:
- All compostable waste now picked up and trucked to local farms. All waste now segregated into three separate waste streams – cardboard, recyclable and biodegradable.
- Purchased high-efficiency ovens to replace older units. Reduced gas consumption by approximately 15%.
- Purchased three new vehicles that now burn bio-diesel.
- Replaced aluminum and plastic packaging with cardboard.
- Joined the Green Restaurant Association for consultation on additional environmental initiatives.
